Baked Flathead Catfish Filets
   4 to 6 hand size filets cleaned and deboned
   Juice of one fresh lemon
   1 teaspoon dill weed
   1 teaspoon hot sauce
   2 tablespoon butter
   2 teaspoons lawrys season salt
   pepper to taste
 
   Pre heat oven to 350*  
   Line baking pan with foil, [ for easy clean up]
   In bowl place filets, lemon juice,dill,hot sauce, season salt ,pepper . Mix well
   Place in foiled lined pan.
   Dot with butter and bake for 20 min. Or until it flakes easy.

Apalachicola River Catfish Stew

Serving: Serves: 12
Cook Time: 45 minutes
Total Time: 1 hour

INGREDIENTS:
5 pounds river catfish
8 slices bacon
2 large onions, chopped
6 medium potatoes, coarsely chopped
2 teaspoons salt
1 (10-oz.) can tomato soup
pepper to taste
Saltine crackers, if desired
finely chopped parsley (optional)


DIRECTIONS:
Clean and head the catfish. Combine catfish and enough water to cover in large pot. Cook over medium-high heat until catfish flakes off easily. Drain through a colander, reserving stock. Discard skin and bones, reserving meat.

Fry bacon in skillet until crisp. Drain, reserving bacon drippings. Cook onions and potatoes in reserved bacon drippings in skillet until tender, stirring frequently. Add mixture to reserved fish stock. Bring to a boil; reduce heat.

Stir in salt, reserved catfish and tomato soup. Simmer for 5 minutes or until potatoes are tender. Season with pepper. You may add crushed saltine crackers if a thicker consistency is desired.

Garnish with chopped parsley, if desired.

Grilled Catfish

Now this is good! Get the freshest catfish filets you can find. . Check your pantry for the rest of the ingredients and presto - you have a fantastic main dish just waiting to happen!

Cook Time: 9 minutes
Total Time: 19 minutes

INGREDIENTS:
1 tablespoon chopped fresh basil
1 teaspoon crushed red pepper
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 farm-raised catfish filets (about 6 ounces each)
1/4 cup vegetable oil


DIRECTIONS:
1. Preheat the grill to medium-high heat. Coat a hinged grill basket with nonstick cooking spray (see Tip).

2. In a small bowl, combine the basil, crushed red pepper, garlic powder, salt, and black pepper; mix well.

3. Rinse the fish with cold water and pat dry with a paper towel. Rub 1 tablespoon oil over each piece of fish, then rub both sides of the fish with seasoning mixture, coating it evenly.

4. Place the fish in the grill basket and grill for 7 to 9 minutes, or until cooked through and firm to the touch, turning the basket over once during cooking.

Preparation Tip: If you don't have a hinged grill basket, before preheating the grill, coat the grill racks with nonstick cooking spray.
